Chickpea Salad

Ingredients

  • 1 small cup of chickpeas
  • 1 long cucumber
  • 1 small cup of cherry tomatoes
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 1 cup of feta or mozzarella cheese
  • Salad dressing and black pepper
  • 1/4 small cup extra virgin olive oil
  • 1 tsp salt
  • 3 tsp lemon juice
  • 1 tsp dried oregano leaves

Method

  • Soak the chickpeas overnight. Next day, add water and a bit of salt to the chickpeas and boil the mixture for about 10 minutes.
  • Mix all the salad dressing ingredients and adjust the level of sourness according to your personal preference.
  • Cut all the vegetables, add the chickpeas and mix.
  • Pour in the salad dressing, sprinkle with cheese, and mix evenly to serve.
